Clean eating : 3 winter starter recipes
Hot goat cheese salad (4 people)
2 Goat’s cheese logs
10-15 cherry tomatoes
4 slices of wholemeal bread
Cut your goats cheese logs into thick slices.
Prepare your salad with the lettuce, and the cherry tomatoes cut in half. Toast your bread slices. Put your cheese on aluminium on a baking tray into the oven at 200°C for 10 minutes.
Serve the cheese on top of your bread slices on the salad and just add a trickle of honey on top to enhance the flavour.
You can also add some crushed nuts and Parma ham if you want to make your salad more consistent!
Onion soup (4 people)
4 big onions
25cl of white wine
6g of flour
100g of grated cheese
4 tbsp chicken broth
4 bread slices
Peel the onions and cut them into small slices. Put them into a pan and cook them on low fire with the butter for 10 minutes. Add the flour and keep stiring. Add the wine and the broth, salt and pepper and cover the pan. Leave it on low fire for 1h30.
Take your bread slices and put some grated cheese on them. Put them on a baking tray in the oven under the grill function for 2mn.
Serve your soup in bowls with the bread on top.
Vegetable broth and raviole (4 people)
4 fresh pasta or lasagna sheets
parsley, salt, pepper
Cut all your vegetables in small pieces and cook them in your water in a pot and add your butter. Add parsley, salt and pepper and leave it for 10mn. Cut your pasta sheet in squares and add them in the broth. Let everything cook for 10 more minutes. You can also add 2 tbsp of chicken or beef broth for more flavour.
